Rhubarb 'Canada Red' is widely considered one of the premier red-stalked rhubarbs for the home garden. This hardy perennial is prized for its high sugar content, which allows for delicious pies and preserves with significantly less added sugar than traditional green varieties. Unlike some rhubarbs that turn green or become stringy as they mature, 'Canada Red' maintains its vibrant cherry-red color both inside and out, ensuring that your sauces and desserts retain a beautiful ruby-red hue after cooking.
It is a more compact variety than the massive 'Victoria' rhubarb, making it well-suited for smaller gardens or even large ornamental borders where its bold, ruffled foliage adds a dramatic architectural texture. It is a fantastic dual-purpose plant that fits perfectly in "food forests" or as a structural element in perennial beds alongside spring bulbs like Tulips.
Quick Facts:
-
Foliage: Enormous, heart-shaped, crinkled green leaves that can grow up to a foot wide. Note: The leaves are toxic (containing high levels of oxalic acid) and must be discarded; only the stalks are edible.
-
Stalks: Slender to medium-thick, bright red from base to leaf, and exceptionally tender with a sweet-tart flavor profile.
-
Light: Full Sun is preferred for the best stalk production, though it will tolerate partial shade, especially in regions with intense afternoon heat.
-
Growth Habit: Clump-forming perennial reaching 2-3 feet tall and 3 feet wide.
-
Hardiness: USDA Zones 3-8. It is extremely cold-hardy and requires a winter "chill" period to produce a heavy crop the following spring.
-
Landscape Use: Excellent in vegetable patches, raised beds, or as a texture-rich ornamental in the back of a border.
